Fish Tacos, Margaritas and good friends

On Saturday the 19th we had ourselves a little get together with about 24 guests. I can't say enough how much I appreciate our good friends and how much I value their company. Somehow I ended up with much more alcohol after the party than before. If I'd had the presence of mind to do it, I should have send people home with a bag-o-beer. Matt brought a bottle of Tanqueray Rangpur Lime gin that didn't even get opened! I'll have to save it for him - Gin and tonic is his drink because of it's relatively low carbohydrate content. Sucks getting old but beats the alternative. Have a drink, on me:

Chris' House Margarita

3 parts ANY Margarita mix:
1 part any anejo tequilla. Gold, not silver
1/2 part any triple orange liquor. Not the clear triple sec. You want a nice gold color of a true cognac based product.

I like to make big batches and serve in a pitcher. I used to use Casadores and Cointreau but I've found that for a mixed drink you can get just as good a result from lesser known brands. Right now I'm using Sauza Anejo Comemorativo - only about $25 for a 1.75L and Liqueur d'Orange by Prunier - both from BevMo. Way cheaper than my old standards. It pays to think outside the box. Always serve on the rocks with salt.

Grilled Fish Tacos

Marinade:
1/2 cup extra virgin olive oil
Juice from 1 lime
3 large cloves of garlic, minced
1TBL of minced fresh parsley
1TSP ground cumin
1TSP chili powder
1TSP dried oregano
1TSP dried basil
1TSP coarse salt
1TSP ground black pepper

Combine all and add to a ziplock bag with 4-6 tilapia filets (or whatever). Turn occasionally to ensure fish is well coated. Marinate and hour or two. Grill on hot fire, gently turning once to keep intact.

Serve each taco on 2 heated corn tortillas with chopped cabbage, minced jalepeno and tequila-lime aioli, below:

Tequila-Lime Aioli

3TBL Anejo Tequila
Juice of 1 lime
8oz sour cream
1/4C milk
2 cloves minced garlic
1/2 tsp ground cumin
2TBL minced cilantro leaves
Salt and pepper to taste

Combine, chill for an hour or so. Spoon on to tacos. Drink a shot of the good stuff.
